Slice the chicken breast into diced sized chunks, then combine the chicken with the rest of the chicken marinade ingredients in a bowl. Mix until evenly coated, then marinate for at least 30 minutes. (b) Roasting the chicken : Add 2 tablespoon of oil and roast the marinated chicken on both sides till you get golden chicken pieces. For the best results, use a well-seasoned cast-iron skillet if you have one. You can also use a regular nonstick pan over high heat. Searing your chicken in batches of two or three to avoid overcrowding the pan helps fry or char (not burn) your chicken pieces instead of simmering in juices. You want golden chicken pieces. Tikka Masala: 1. Heat oil in the same pan on medium heat, then saute the onions add ginger, and garlic until tender. 2. Add all the dry spices for about 30 seconds to release their aromatics and flavor, stirring constantly, then stir in the tomato puree. 3. Now add -water, then bring to a boil and cook for about 5 minutes. 4. Adjust consistency and add another half cup of water. 5.
